Combine 1 can of sweetened condensed ...Coconut Ice:<br />Combine 1 can of sweetened condensed milk, 3 1/3 cups of icing sugar and 4 1/4 cups desiccated coconut. mix well, divide the mixture in half. Press half in the base of a small slab tin, colour the rest with food dye. Press the pink mixture over the white slab. Chill until firm.<br /><br />I just remembered that I also used to add a bit of lemon juice when I made this as a kid, so that might help with mixing and rolling it out. It was tough going! The cold weather wouldn't have helped either I'm sure.
