I've been baking again!! Hooray! Here are my latest creations:

I really like having the time to put together these creations for our friends down here. I'd like to do it more often too, so watch this space!!

    Good job!! I enjoyed those anzacs you baked on the way home....you even inspired me to make them (almost - well, I thought about it, then ran out of time!!),

    Coconut Ice:
    Combine 1 can of sweetened condensed milk, 3 1/3 cups of icing sugar and 4 1/4 cups desiccated coconut. mix well, divide the mixture in half. Press half in the base of a small slab tin, colour the rest with food dye. Press the pink mixture over the white slab. Chill until firm.

    I just remembered that I also used to add a bit of lemon juice when I made this as a kid, so that might help with mixing and rolling it out. It was tough going! The cold weather wouldn't have helped either I'm sure. Enjoy!
